Sassomoro Lambrusco di Modena Castelvetro

Description: Deep ruby red in colour with an aromatic nose, strongly reminiscent of fresh strawberries. The palate is richly soft, generously fruity and delightfully refreshing, offering ripe, concentrated red berry fruits such as cranberries, raspberries and strawberries, a fine, persistent mousse and a soft finish. Low acidity and very little tannin combine to create a deliciously fruit driven, thirst quenching wine.
Vineyard: Sourced exclusively from vineyards within the Chiarli Family estates at Castelvetro. Vineyards are situated on ancient alluvium around the Guerro stream, at the foot of the Appennines. In this area, the land is gently undulating for the cyclical alternation between erosion of the soil and deposition of sediments. The upper stratum is around 50 cm thick and is mainly composed of silt, whilst underneath it one can find a layer of gravel.
Vinification: The grapes are pneumaticaly pressed, very gently, and left to cold macerate for 48 hours at 10 - 12 degrees C. The juice is then racked off the skins and clarified before a slow fermentation at 18 degrees C in "cuves closes". This sealed environment forces some of the carbon dioxide (a natural by product of the alcoholic fermentation) to become trapped in the wine, creating the lightly sparkling character.
Food Match: Excellent as an aperitif or to accompany pasta, roast meat or mature cheese, especially as an alternative to heavier reds on a warm day. Serve chilled.
