Description:
Cuccimanné is the abbreviated name by which the wagtail is known in Salento, a small bird present in the Susumaniello vineyards. Susumaniello is a red grape from Puglia- almost exclusively grown in Salento region and often blend with negroamaro due to its dark fruit and spice notes.
Vinification: The must obtained from freshly pressed grapes remains in contact with the skins for a few hours at a temperature of 15-16 °C. Short maceration to obtain rose. Refines in the bottle for approximately 2 months.
